When in London, where eating was obviously one of the activities, I had decided that I wanted to go to an Indian restaurant. I heard somewhere that the British capital had the best Indian restaurants in Europe. Even though I am definitely sensible (red face and runny nose) to any kind of spicy food (the spiciest thing growing up at home was pepper), I truly love all the smells and spices that Indian food brings to you.
Moreover, spices are definitely something good for you! This article gives you a good idea about all the health benefits of spices in general:

So I went in some kind of Indian craziness: I went to an Indian restaurant, got Indian incense and bought the “India: The Cookbook” by Pushpesh Pant. This book displays literally over 1,000 recipes. It explains that those recipes are not even close to demonstrate the variety and intricacies of Indian Gastronomy.
I was a bit overwhelmed when I tried to choose one recipe to try. So I opted for one of the easiest : cardamom tea.
As I try to always accompany my goûter with some kind of hot drink, this was perfect to begin with.

CARDAMOM TEA
–
Yield: 1 small tea pot – Prep time: 5 min – Infusion time: Around 5 min
What you’ll need
Tools
- Electric or manual grinder
- Small tea pot (I have one of those japanese cast iron tea pot, best purchase ever)
Ingredients
- 2 tbsp of green tea in leaf
- 3 cardamom pods
Here is my philosophy : use whatever you have in your pantry that is close to the ingredients above if it is more convenient for you. Everyday cooking is fun, it should not be a dictatorship !
Moreover, This is how you create unique recipes which will be yours.
Directions
Smash open the cardamom pods to gather the seeds.
Grind them into a powder with the grinder.
Put the tea leaves and the cardamom powder in the tea pot, add water (it should not be boiling!).
Let infuse for 5 min and remove the tea leaves.
Et voilà !
