Let me tell you, roasted vegetables is the thing to pimp all your summer dishes. Moreover, it is simple, quick and easy like a good frenchie likes it.
You can roast any kind of vegetable :Think pepper, onion, broccoli, pumpkin.

Instructions
ROASTED VEGETABLES
Yield: 2 servings – Prep time: 10min – Cooking time: 30min
What you’ll need
Tools
- 1 big bowl
- 1 cutting knife
- 1 cutting board
- 1 piece of parchment paper
- 1 oven pan
Ingredients
- 1 eggplant
- 2 zucchinis
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/2 tsp mixed dry herbs
Directions
First, pre-heat the oven at 450°F.
Then, slice the eggplant and the zucchinis (be careful to make slices that are the same size for them to cook evenly).
Put them in the big bowl and combine with all the remaining ingredients.
Toss so that the olive oil and the spices cover them evenly.
To finish, put the vegetables on a parchment paper on the oven pan and bake until golden (approx. 30min).
