Hello granola, that is for sure a basic. And an easy one.
Today, I’ll give you my favorite recipe (beware the cinnamon, as you may have noticed I’m addicted). But, the magic with this one is that you can do whatever you want with it and adapt it as much as you like. Bingo. This fits perfectly my philosophy and habit to not follow a complete recipe but customize it and adapt it to your taste and with what you have in your pantry. You need to remember one simple thing is this: 6 parts dry to 1 part wet.
You don’t like cranberries ? Use raisins.
You don’t have coconut oil ? Olive oil is great.
Meh, Pumpkin seeds ? skip it.
Granola is amazing for breakfast (add it to your smoothie bowl and you have a taste of heaven) or for your dessert (on yogurt, yes please).

Instructions for the Awesome Granola
Yield : 1 large container – Prep time : 10min – Cooking time : 30 to 40 min
What you’ll need
- 2,5 cups of oats
- 1 cup of pecan
- 1/2 cup of almonds
- 1/2 cup of flax seeds
- 1 cup of pumpkin seeds
- 1 cup of sunflower seeds
- 1 cup of dried cranberries
- 3 tablespoons of coconut oil
- 3 tablespoons of maple syrup
- 3 teaspoons of cinnamon
Crush the pecans and almonds in the mortar until they are partially crushed.
Then add the pecan and almonds to the large mixing bowl with all the other dry ingredients (keep the cinnamon and the cranberries aside) and stir together.
Melt the coconut oil with the maple syrup and cinnamon in the small saucepan.
Once it’s well dissolved, add it to the dry bowl and mix well. This should form a deliciously smelling bowl which is slightly sticky.
Put the mixture into the baking dish and bake for about 30-40 minutes at 180C°/350F°, until crunchy.
Stir every 15min the mixture to ensure that every bit of the granola gets toasted and that the top doesn’t burn.
When the awesome granola is cooked remove the tray from the oven and allow it to cool, then stir in the cranberries.
Finally, you can store the granola in an air-tight container to keep it fresh and crunchy for a long time.
